Ingredients
2 cans white beans, rinsed (navy/pinto/cannellini Or chickpeas)
1/2 cup almond butter
3 eggs
2 tsp vanilla extract
Pinch salt
¼ tsp cinnamon
1/3 cup honey
¼ cup water
3 Tbsp mini chocolate chips
Directions:
Preheat oven to 350 degrees. Blend all ingredients aside from chocolate chips in a blender. Add chocolate chips and pulse for 5-10 seconds to gently mix. Pour through blender spout onto cookie sheet lined with parchment paper to form small (palm of hand sized) cookies. Bake for 18 min. Enjoy as a mid-afternoon snack or as a breakfast on the go.
