Ingredients
1 box red lentil rotini or penne
2 Tbsp olive oil
½ red pepper, diced
½ yellow pepper, diced
½ green pepper. diced
1 small zucchini, cubed
8 oz package of baby bella mushrooms, sliced
Salt and pepper to taste
16 oz pizza or marinara sauce
1 ½ cups shredded mozzarella cheese
½ cup sliced black olives, strained
Goat cheese for garnishing
Directions
Cook lentil pasta according to package directions and drain. Heat oil on medium low flame and saute peppers, zucchini, and mushrooms for 8 minutes until softened. Season with salt and pepper to taste. Add vegetables, sauce, mozzarella, and olives to the pasta and toss. Cover and bake at 375 for 30 minutes until cheeses are melted. To serve, sprinkle with goat cheese crumbles.
