Ingredients
1 onion, diced small
2 cloves garlic, minced
3 Tbsp olive oil
1 carrot, diced small
1 celery. diced small
1 zucchini, diced small
12 oz (1.5 of 8 oz packs) of mushrooms, sliced
32 oz low sodium vegetable broth
½ of a 1 lb bag of barley
3 Tbsp low sodium soy sauce or Braggs liquid aminos
Salt and pepper to taste
Directions
Saute onions and garlic in olive oil for 2-3 minutes. Add remaining ingredients (except salt and pepper.) Bring to a boil, then reduce to a simmer. Cook for 1 hour. Adjust salt and pepper to taste.
